Hey all,
I recently upgraded my account to include all cards, but for the life of me I can't figure out how to choose expansions in Automatching (or if this is possible). I see how to do it via New Table>Create Table, but not otherwise ... Can it be done? I'm not ready to dive into rated games with Empires and the like.

It's not possible for rated automatch to select fewer expansions than you own. You could do it with practice match, which is unrated and respects familiar cards. (There you can select the cards that you're fine with:)
Or you need to create the table and wait for someone to join.
